VINIFICATION
Picked in the early mornings to maintain the night temperature, our grapes were pre-chilled to 4°C before being de-stemmed and hand sorted, 10% of the grapes are not de-stemmed, but fermented whole bunch. Initially punch downs are performed daily to extract colour and tannins, but when fermentation is underway, pump overs are used to allow for some aeration. Aged in first and second fill French oak barrels for 8 months before being bottled unfined and unfiltered.
